Good Morning and happy Thursday! I am back at work today and sadly very tired.. I got too used to sleeping in on vacation and getting up at 6 am was super tough this morning. Enough about me though, lets get to today’s recipe!
Now its no secret I am dating a vegetarian.. and I’ve been known to get creative.. so I have adapted this recipe for Portobello Cheese steaks that are delicious when served with sweet potato fries. Here’s what you’ll need
2 teaspoons extra-virgin olive oil
1/2 medium onion, sliced or diced.. however you like your onions
2 large portobello mushrooms, sliced
1/2 large red bell pepper, thinly sliced
1/2 teaspoon freshly ground pepper
1 tablespoon all-purpose flour
1/4 cup vegetable broth,
1 tablespoon reduced-sodium soy sauce
3 ounces thinly sliced reduced-fat provolone cheese or any cheese really, whatever you have
whole-wheat buns, split and toasted
Firstly, heat oil in a large nonstick skillet over medium-high heat. Add in your onion and cook, stirring often, until soft and beginning to brown, should take about 2 to 3 minutes.
At this point you are ready to toss in your sliced mushrooms, bell pepper and pepper. Cook down your veggies, stirring often, until the vegetables are wilted and soft. Once they are cooked (yum, by the way) Turn down your stove top and sprinkle the vegetables with flour to coat.
Stir in broth and soy sauce; bring to a simmer. The sauce should thicken up a bit here, and once it has, remove the pan of deliciousness from the heat, top with your cheese of choice, cover and let stand until melted.
Then top on your toasted buns.. throw your fries on the side and voila! delicious. Damn I just made myself hungry.
