Recipe Thursdays – Caramelized Onion Mac and Cheese

Is there anything better than Mac and Cheese? I realize that as the weather is getting warmer, people are switching from their usual winter comfort foods… but I always refuse to give up Mac and Cheese.

This is a great recipe I found somewhere… and frankly wouldnt change a thing about it.

Caramelized Mac and Cheese

6 medium onions, sliced thinly
3 tbsp olive oil
1 tbsp butter
1 tsp salt
2 tbsp brown sugar
450g uncooked macaroni
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1 1/2 cups shredded cheese (I used an Italian blend of mozzarella, asiago, parmesan and provolone)
1/2 cup aged white cheddar, shredded
1/2 tsp dry mustard powder
Salt to taste

1. Put the 3 tbsp of oil and 1 tbsp of butter in a heavy bottom frying or sauce pan and put over medium heat until the butter is melted and oil is glistening.
2. Add the onions. Stir to coat all the onions in oil.
3. Cook onions over medium-low heat (I had my burner set at 3) stirring ever 5 minutes or so.
4. After 15 minutes add the salt and stir. Continue to stir occasionally not letting the onions burn.
5. Add the brown sugar and continue to slowly cook, stirring and moving the onions around as needed until they’re soft and golden brown. This could take up to an hour.
6. In the meantime, cook the macaroni to under al denté. (you want them slightly under cooked so they don’t go mushy)
7. In a large saucepan heat the butter over medium-high heat until melted and then add the flour. Stir with a whisk to incorporate and continue to stir for 3 minutes to cook the flour.
8. Add the milk and continue to whisk until the mixture thickens. Add the cheeses and stir until the cheese has melted.
9. Pour the cooked noodles, cheese sauce and onions into a slow cooker and mix. Set the slow cooker to low and cook for 4 hours. Serve hot.

(You can do this on the stove as well, just cook your noodles to al denté, mix your cheese sauce and onions with the noodles in the pot and serve)

The Voice made me sad :(

It’s a cloudy/dark/rainy Wednesday morning here in Ottawa, which suits the mood this morning still I am still pretty sad about the outcome from last nights The Voice elimination show. I am disappointed that not one, but two of my favourites have been eliminated from the competition. I mean what are the odds.

Sadly I missed the performance show on Monday, but it turns out that NBC does a quick 1 hour recap before the elimination show, so people like me can catch up.

Sarah Simmons (eliminated) – Somebody I used to know.

Not sure this should have gotten her eliminated, but it wasn’t my favourite performance.

Judith Hill (eliminated) – #thatPOWER

Vocals – great… but the song is not my favourite

Sadly with Judith gone.. we wont see anything like this gem again

I am loving this girl more and more every week. This stripped down version of this song is fantastic!

Amber Carrington – Skyfall

I had to listen to this three times before I could really appreciate how good this actually was. Although I hate when people cover Adele.

I cant give up on The Voice yet… here’s hoping it doesn’t disappoint me again

Tourism ad “disaster” ?

So I mentioned yesterday that I had found something to write about and decided to delay it to today in order to post that gem of a video of Celine Dion dancing like she had just stepped out of the disco era. Which to my own credit and enjoyment, still makes me laugh and I’ve seen the video about a dozen times.

So here is the backstory. I find I occasionally have some free time on the weekend, in which I like to curl up on the couch and catch up on the TV I missed during the week… thank god for PVR’s, I would never get to catch my shows otherwise.  Now normally I fast forward through the commercials, since I am afforded that luxury but I think I’d gotten up for water or a snack and managed to catch this little number.

Now here is the reason I am posting about this today. I completely realize that tourism is a major revenue driver for communities, and I know millions get spent each year on tourism ads. There is just something that doesn’t sit right with me on this one.

It was brought to my attention that the Gulf Coast (thanks to BP) created a similar campaign after the oil spill a few years ago, but when does it go too far to promote a region based on its ability to survive a major tragedy. Now I could completely be reading too much into this, and this could be a genius marking campaign, but still for me something doesn’t sit right.

That being said, the song is kind of catchy.

I am not going to lie, todays post has been delayed because I dont really know what to talk about today. Then I found something, but I think I am going to save that for tomorrow because I found the below video.

I really dont think it needs much explaining.

Music Review Fridays – Over the Land and Sea

Happy Friday everyone… it’s the day everyone has been waiting for all week, the day before your way to short weekend! Thankfully you get a music review from yours truly to launch you into the weekend! Today’s review is “Over the Land and Sea” by Lauren Mann and the Fairly Odd Folk.

Lauren Mann and the Fairly Odd Folk

A little birdy turned me on to this band a while back, and I am really glad  that he did. This album plays right into my folk sensibilities! It’s definitely something I can listen to all the way through and then play it again.

Upbeat songs like How it Goes and Weight of the World are fun yet are still strong lyrically. Balanced with these are slower songs, like Fragile which in my opinion is a fantastic opening track. I highly suggest checking this album out!

I think I have already listened to it 3 times today 🙂
